When and How to Harvest Potatoes by Pulling not Digging

All garden potatoes are harvested at the end of the growing season, but exactly when to harvest depends on how you will use them. Potatoes you'll harvest and eat right away, called new potatoes, are harvested before potatoes you plan to cure for winter storage.

Once you've planted your seed potatoes in cool but mostly frost-free weather (they can tolerate very light frosts), they'll need to get as many cool days as possible before harvest.

You will need to keep an eye on the flowers and foliage to determine when to best harvest your crop. Harvest baby potatoes two to three weeks after flowering ends and harvest potatoes for storage two to three weeks after plant foliage has died.
